    2 Yellow Squash, diced
    2 Zucchini, diced
    1 10 oz can Diced Tomatoes with Green Chilies
    Canola oil, 1 tbsp
    1/2 onion, chopped
    Garlic, 1 clove, minced
    Salt to taste


Saute onions and garlic in oil. Add remaining ingredients. Cover and simmer for 20 minutes or until tender. Makes 4 1- cup servings.
