Ingredients

    Smart Balance Light Olive Oil Buttery Spread
    1/2 cup egg whites
    1 cup fresh chopped spinach
    1 medium chopped tomato
    1 tbsp chopped white onion
    1 tbsp chopped fresh parsley
    1 oz reduced fat feta cheese
    salt pepper to taste

Directions

Chop veggies and lightly saute in olive oil butter spread. Add egg whites and turn heat to low. Don't cook to fast or outside will burn and inside will be runny. Add Feta Cheese and salt and pepper to taste. Let eggs cook and begin to set (a few minutes...watch closely). When you can slide a spatula under omelette without egg running off, gently fold one side of omelette onto the other. Let cook for one minute and then flip entire omelette and cook one more minute ( or until omelette is cooked thoroughly) Serve with a Tbsp of salsa for a little kick!

Makes one Large serving or two small servings.
