Introduction

This was originally made as a loaf but adapted to lower calories and fat and to make healthier with the removal of half the butter and the addition of applesauce. Also, the flour was changed to half all purpose and half whole wheat. you could use all whole wheat if you like. They freeze well. Ingredients

    Egg, fresh, 2 large (remove)
    Margarine, soft, 0.25 cup (remove)
    Banana, fresh, 1 cup, mashed (remove)
    Pineapple, canned, 1 cup, crushed, sliced, or chunks (remove)
    Baking Powder, 2 tsp (remove)
    Baking Soda, 1 tsp (remove)
    Granulated Sugar, 1 cup (remove)
    Organic All-Purpose White Flour, 1 cup (remove)
    Whole Wheat Flour, 1 cup (remove)
    Motts Natural Apple Sauce, .25 cup (remove)
    juice of 1 orange

Directions

Preheat oven to 350 degrees.
Cream butter and sugar, add eggs. Combine all ingredients and mix til well blended. Bake in greased muffin tin.
Bake until done approximately 30-35 minutes.

    Incredible!
    These were really good! I did not have any whole wheat flour so I used all unbleached flour and split the sugar half and half with light brown and white and used promise light margarine and got them down to 97 calories! We really love the mix of bananas and pineapple! - 3/28/12
