Ingredients

    3/4 c uncooked brown rice
    1 1/2 c water
    1 can (15 oz) black beans rinsed and drained
    1 can (10 oz) diced tomatoes
    1 c salsa
    1 c fat free sour cream
    1 c mozzarella cheese
    1/4 tsp black pepper
    1/2 c chopped red onion
    1 can (2 1/4 oz) sliced black olives, drained
    1/4 c shredded mexican blend cheese

Directions

In large sauce pan, bring rice and water to a boil. Reduce heat; cover and simmer for 35-40 minutes or until tender.
In a large bowl, combine the beans, corn, tomatoes, salsa, fat free sour cream, mozzarella cheese, pepper and rice. Transfer to a shallow 2 1/2 quart baking dish coated with non stick cooking spray. Sprinkle with onion and olives.
Bake uncovered at 350 for 20 minutes. Sprinkle with additional mexican blend cheese and bake an additional 5 minutes longer or until heated thru. Let stand 10 minutes before serving.
