Ingredients

    1/2 cup pearl barley
    1/2 cup onions, finely chopped
    1/2 cup red pepper, finely chopped
    2 TBS malt vinegar
    2 packets low sodium instant boulion
    4 cups water
    2 cups cut green beans, fresh, frozen, or canned
    Seasonings to taste

Directions

Combine all ingredients except green beans in a pot. Bring to boil and then cover and simmer for about 40 minutes. Add additional water as needed. Add green beans and continue cooking for an additional 5-10 minutes.

I season this with some curry, basil, garlic, capers, tabasco sauce, and black pepper, but you can use any seasoning you like.

Makes 4 large servings.
