Ingredients

    12 oz. large shrimp
    4 t. margarine
    1 t. olive oil
    2 t. lemon juice
    4 t. chopped shallots or green onions
    1 t. minced garlic
    dash salt and pepper
    4 t. chopped parsley
    1 1/3 c. cooked spaghetti
    2 t. brandy or sherry (optional)

Directions

In large skillet, heat olive oil. Add shrimp and cook until opaque in center; remove to a warm plate. Add garlic and shallots to skillet and cook until fragrant (about 10 seconds), then add lemon juice, brandy or sherry, parsley, salt and pepper. Remove pan from heat and add margarine. Return shrimp to pan and toss to coat with sauce. Arrange over pasta. Spoon remaining sauce over shrimp.
