Introduction

Ingredients

8oz. of whole wheat fettuccine or thin spaghetti
2tsp. of olive oil
1/2 cup of chopped onion (1 medium onion)
1 or 2 gloves of garlic, mined
2 and 1/2 cups of chopped tomatoes (3 medium sized tomatoes, or use canned)
2 cups of chopped chicken or turkey breast meat
3Tbsp. freshly chopped basil (or use 1tsp dried)
1/2 tsp. salt
Directions
- Cook the pasta according to the directions on the box. Drain, and cover.
- Heat up a skillet and add the olive oil. Then add the onion and garlic. Cook until the onion starts to become translucent. Be careful not to burn the garlic.
- Stir in the remaining ingredients (tomatoes, chicken or turkey, basil, and salt). Reduce the heat and cover it. Stir frequently to keep it from burning, until the tomatoes are soft.
- Serve over the pasta.
Makes 4 generous servings.
