Introduction

I couldn't find the exact recipe I wanted, so I made my own. My family loves this! I couldn't find the exact recipe I wanted, so I made my own. My family loves this!
Number of Servings: 4

Ingredients

    1 tsp Extra virgin olive oil
    1 red bell pepper, sliced in strips
    1 yellow bell pepper, sliced in strips
    1 medium onion, chopped
    1/3 cup Maple Grove Farms Fat Free Raspberry Vinaigrette
    1/3 cup Maple Grove Farms Fat Free Balsamic Vinaigrette
    12 oz raw shrimp
    1/4 cup Polaner's Sugar Free Orange Marmalade with Fiber
    2 chipotle peppers, chopped
    2 tbsp adobo sauce

Directions

Saute bell peppers and onions in olive oil until tender. Add shrimp and both vinaigrettes. Saute until shrimp is cooked through. Add chipotle peppers, adobo sauce, and marmalade.
Makes 4 1-cup servings

Tip: serve over brown rice or whole wheat pasta (not included in calories).
