    5 large cucumbers
    4 Plum Tomatoes
    I Red/Purple Onion, med
    Ic Apple Cider Vinegar
    I Garlic Clove
    1/4 c Chopped Fresh Basil
    1/2 Fresh Lime
    1/4 tsp Salt
    1/8 tsp Fresh Pepper, Ground Black


Makes roughly 4 1c servings.

Slice cucumbers and tomatos, then cut into half-moon.
Thinly slice and cut up red onion.

In bowl, muddle up and stir together garlic, basil, salt, pepper, 1/2 cup of vinegar and lime juice.

Place cucumbers, tomatos and red onion in large serving bowl add other 1/2c of apple cider vinegar and mix together.

Add flavor mixture to serving bowl and stir. Let sit at room temp for 15min, serve and enjoy.

Can be refridgerated after, but will not keep long.
