Introduction

Fairly simple recipe, with just a bit of prep work. I use granny smith apples, because of the tartness. Others prefer a sweeter apple. Ingredients

    1 lb boneless pork loin - fat removed - cubed
    3 tbsp margarine
    1 small onion - chopped
    2 apples, peeled, cored and chopped
    3 tbsp flour
    1 tbsp curry powder (more or less to suit your taste)
    1 cup vegetable stock (homemade - no salt)
    1 cup 1% milk

Directions

Preheat oven to 350. Saute apple and onion in the margarine until tender. Add curry powder, saute for about another minute, then add flour and cook for a minute longer.
Add stock and milk, stir well. Pour the sauce into a 9 by 9 baking dish, add the pork, stir gently. Bake for 45 to 50 minutes.
Great served with brown rice cooked in the vegetable stock.
