Introduction

An earthy, tart tahini (ground sesame paste) dressing. Goes well on a roasted butternut squash and chickpea salad. Makes about 3/4 cup of dressing, or six 2-Tbsp servings. Ingredients

    2 cloves garlic, minced
    3 Tbsp tahini
    1/4 cup fresh lemon juice (meyer lemons if available)
    2 Tbsp water
    2 Tbsp extra virgin olive oil
    1/4 tsp salt
    1/4 tsp smoked paprika (or to taste)
    Pinch cayenne pepper (optional)

Directions

Mince garlic and whisk together all ingredients until smooth.
