Introduction

Number of Servings: 10

Ingredients

    1 can black beans, rinsed & drained
    2-1/2 cups cooked lentils
    1 small can mexi-corn
    1 can diced tomatoes, no salt added
    1/2 cup chopped onion
    1/2 cup chopped bell peppers
    1/4-1/2 cup fresh cilantro
    1/4 cup olive oil
    1/4 cup balsamic vinegar
    1/2 T ranch dressing
    3/4 t cumin
    1 garlic clove, minced
    1 t lime juice
    1 t cayenne pepper
    salt & pepper, to taste

Directions

1. In a large bowl, combine black beans, lentils, mexi-corn, diced tomatoes, onion, peppers and cilantro.

2. In a small bowl, combine olive oil, balsamic vinegar, ranch dressing, cumin and garlic.

3. Pour dressing over lentil mix and season with lime juice, cayenne and salt and pepper. Chill for 4 hours to let dressing infuse with salad.

Yield ~10 servings (1-1/2 cup)
