Banana, fresh, 3 medium (7" to 7-7/8" long)
Egg, fresh, 2 large
*Canola Oil, .33 cup
Yogurt, plain, skim milk, .75 cup
Granulated Sugar, .5 cup
*Whole Wheat Flour, .75 cup
*Wheat flour, white, bread, enriched, 1.25 cup
Baking Powder, 3 tsp
Baking Soda, 1 tsp
Salt, .5 tsp
*Semi-Sweet Mini Chocolate Chip Morsels, 4 tbsp
Directions
Preheat oven to 400 degrees.
Mash bananas and add eggs, oil, yogurt, sugar and vanilla. Stir well to mix.
Add flours, b. soda, b. pwd, salt and chocolate chips (use mini chips for better distribution)
Mix until all just combined.
Spoon into 18 paper lined muffins cups.
Bake for 12-13 minutes. Do not overcook.
Makes a nice light medium sized muffin. (I use large paper liners and fill to the top of the liner)
