Ingredients

1.5 cups Egg Beaters
0.5 cup Sundried Tomatoes
0.5 cup diced Turkey
0.25 cup freshly shredded Parmesan Cheese
3 tsp chopped Garlic
2 tbsp chopped Onion
1 tsp Olive Oil
Directions
Preheat oven broiler.
Add Olive Oil, chopped Onion, and chopped Garlic to large ovensafe frying pan. Cook on stovetop 3 minutes or until onion is translucent. Set pan aside.
In workbowl, mix remaining ingredients well.
Add to pan, stirring to blend in the garlic and onion. Cook over low heat for five minutes.
Remove from stovetop and place under the broiler for 2-3 minutes, or until just lightly browned around edges. Egg should be fluffy.
Carefully loosen frittata around edges with a spatula and slide onto plate. Cut into quarters.
Makes Four Servings
***Substitute your own choice of in season vegetables finely chopped or try all Egg White Egg Beaters instead. If you have a little extra room in your plan, try a tablespoon of Fat Free Sour Cream spread on top of each slice.***
