Introduction

Healthier, no added oil corn bread. Very crusty and wonderfully sweet. Made in a bread loaf pan. Healthier, no added oil corn bread. Very crusty and wonderfully sweet. Made in a bread loaf pan.

Ingredients

    1 1/2 C Yellow Cornmeal Mix
    1/2 C Whole Wheat Flour
    1/2 C White Flour
    !/4 C Ground Flax Seed
    1 C Milk
    1 1/2 tsp cider vinegar
    1/2 C Unsweetened Applesauce
    1/4 C sugar (honey or brown sugar or Splenda)

Directions

450 degree oven. 9X5 loaf pan greased with cooking spray. Bake 20 min. Test with toothpick for doneness. Cut into 12 servings slices.

Mix: Ground Flax seed, vinegar, milk and applesauce in bowl, stir to mix. Add the rest of the dry in gredients (if use honey, add to wet ingredients) Stir well.
Pour into lightly sprayed loaf pan (9"X5"). Bake for 20 min. Check for doneness with toothpick.
Cool slightly on a wire rack if eating warm.
Cool and store covered (wrapped in waxed paper and tin foil.
