Ingredients

1kg Zucchini
1 tbsp (and more if you like) dried Parsley; if you have fresh Parsley go for it
2 Eggs
2 tbsp Flour
80g grated Gouda cheese
3 dashes grounded Nutmeg
grounded Salt & Pepper
Olive Oil for cooking
Directions
- Wash, then grate the unpeeled Zucchini. After that put it in a sheer dishtowel, and press out as much Zucchini "water" as you can.
- whisk the eggs in a big bowl;
- Then add Flour, grated Cheese, dried Parsley (or chopped fresh), Zucchini and Nutmeg to the eggs in the big bowl. Add a bit of fresh grounded Pepper and stir it all well up.
- Warm up the oil in your pan, or your deep fryer
- a big scoop of the Zucchinimass with a tbsp should be about the right size for one Beignet; put in the pan/fryer; cook it with both sides for at least 3 minutes;
Don't be affraid to overcook it!!!
be sure to be carefull, when you turn the Beignets!!!
At the end they should be a bit crispy on the sides, and light brown;
After frying dab the fat off the Beignets with paper towels
- ground a bit of fresh Salt over the Zucchinibeignets
Enjoy while hot! :)
