Introduction

Ingredients

1 Tbsp EVOO
3/4 onion, chopped up
16 oz Perdue Ground Turkey Breast (99% fat free)
3 tomatoes, chopped up
1 Tbsp Minced Garlic
1 Lime (juice)
4 oz Diced Green Chilies
16 oz Whole Wheat Organic Elbow Macaroni
8 oz (1/2 jar) Salpica Cilantro and Green Olive Salsa
3/4 cup Fat Free Sour Cream (Breakstone)
1 bunch fresh Cilantro (about 1 cup) chopped up
1 Tbsp Cumin, divided
2 tsp Hot Mexican Chili Powder, divided
1/2 cup Sargento Reduced Fat Shredded Mexican Cheese
Directions
Cook macaroni according to package directions. Drain.
Meanwhile, in a skillet put the EVOO and minced garlic. Once it starts to sizzle add onion. Once onion starts to brown add the turkey. Sprinkle with some cumin and chili powder. Cook until turkey is no longer pink, stirring occasionally. Once done, mix with the macaroni. Add some more cumin :)
In a separate (large) bowl mix together the cilantro, tomatoes, sour cream, salsa, lime juice, and green chilies. Sprinkle with cumin and chili powder.
Dump the turkey/macaroni mixture into the other stuff and mix everything together. Pour into a rectangle baking dish (I buy the throw-away foil ones). Top with cheese and bake for about 20 minutes at 400.
Makes 12 (1-cup) servings. I usually eat 2 at a time ;)
