Ingredients

1 T Butter
2.5 t Minced Garlic
.5 Medium Onion, Minced
2 14oz Cans Fit & Active Chicken Broth
2 T Flax Meal
3 t Fine Ground Sea Salt
2 T Poultry Seasoning
2 Small Frozen Boneless Skinless Chicken Breasts
1 Cup Brown Basmati Rice
1.5 Cup Lundberg Brown and Wild Blend Rice
1.5 Cup Minnesota Wild Rice
3 6.5 oz Cans Mushrooms
4 c Frozen Spinach
Directions
Melt butter over medium-low heat and saute onions and garlic, add .25 cups of broth and flax meal, stir constantly until thickened, and very gradually add remaining broth, stirring constantly and allowing it to thicken slightly between additions. Stir in salt and poultry seasoning.
Add chicken breasts, cover and let simmer until chicken is cooked outside. Remove breasts and slice into 1 inch cubes, return to pot.
Add 12 cups of water and the rices, stir and reduce heat. Simmer covered for 1 hour, or until rice is tender.
Add remaining water, drained canned mushrooms and spinach, simmer 30 minutes, stirring occasionally.
Makes 28 1 cup servings.
