Ingredients

    Muffin Ingredients
    2 c. flour
    1/2 c. Splenda
    3 tsp. baking powder
    1/2 tsp. salt
    1 tsp. cinnamon
    3/4 c. milk, nonfat
    1/3 c. canola oil
    1 egg

    Walnut Streusel Topping
    1/4 c. brown sugar
    1 tbsp. soft butter
    1/2 tsp. cinnamon
    1/4 c. chopped nuts

Directions

Heat oven to 400°F. Line 12 muffin cups with paper baking cups.
In a bowl, combine flour, sugar, baking powder and salt (cinnamon).

In another bowl beat the egg with a fork or whisk. Add milk and vegetable oil. Mix well.

Wash, peel, and core 1 apple. Chop fine. Add to liquid mixture.

Stir wet and dry ingredients together. Stir only until dry ingredients are moistened. Over mixing causes toughness and tunnels.

Fill muffin cups 2/3 full. Sprinkle tops with streusel topping. Bake 18-20 minutes.

Makes 12 muffins
