Ingredients

    1 cup dry Whole Grain Quinoa (makes almost 2 cups cooked)
    1 tbsp olive oil
    2 tbsp lemon juice
    1 large cucumber, peeled, chopped
    3/4 bunch fresh parsley, destemmed, chopped finely
    4 small tomatoes, chopped
    Sea salt

Directions

Cook quinoa according to package directions. When still warm, add all ingredients and stir well. Put in refrigerator to cool for at least 15 minutes, or more if you have time, before serving.

Adjust lemon, salt, and parsley to taste.

Makes 6-8 servings.
