Ingredients

    1 can (19oz) Chickpeas
    1tbsp butter
    1 half large onion
    4 cloves garlic
    6 roma tomatoes
    1/2 tsp or more cumin
    2 tsp or more Madras or other curry powder
    kosher salt to taste

Directions

melt butter in pan and add onion and garlic. Saute until soft. Add in spices, salt and pepper, stir to cook for a couple of minutes. Add chickpeas (undrained) and tomatoes. Stir to combine, let simmer approximately 20 minutes or until heated through and tomatoes start to break down.
