Ingredients

    Ingredients:
    Kale, 8 cup, washed, prepared (remove veins) chopped
    1/2 cup water
    Garlic, 2 tsp
    Nutmeg, ground, 0.2 tsp
    Ham, extra lean, (5% fat), 1 cup, diced 1/2 inch pieces
    *Canola Oil, 2 tbsp
    Salt, 1 dash (remove)

Directions

In a deep pan Spray pan with onon stick cooking spray if you do not have a teflon pan.
Canola oil. Heat until smoking.

Add the kale on medium heat, stir constantly. As it starts to wilt down to half its size, add the water, garlic, ham, salt. heat all ingredients through stirring and turning constantly.

Just as the water evaporates to almost nothing, grate in fresh nutmeg.

Remove from heat and serve immediately.
