Number of Servings: 16

Ingredients

    1 lb ground turkey
    1 lb roll pork sausage or italian sausage
    1 chopped green pepper
    1 chopped yellow onion
    3 minced clove garlic
    1/2 cup yellow cornmeal
    2 eggs
    12 (1 oz) slices swiss cheese
    6 cup spaghetti or marinara sauce

Directions

Chop onion and green pepper to small pieces and mince garlic
Preheat oven to 425 degrees Fahrenheit
In a large bowl combine pork sausage or italian sausage with ground turkey (you will probably have to use your hands unless you have a powerful mixer). Add the cornmeal and egg; then mix again. Finally, mix the green pepper, onion, and garlic into the meat mixture.
Grease a large muffin tin and fill the cups halfway with the meat mixture. Push the meat into the cups and mold around side to make a meat cup. Rip swiss cheese slices in half and put a half slice of cheese into each meat cup. Cover each meat cup with more meat mixture and push down so the meatloaf is even with the top of the muffin pan.
Place muffin tin on center rack of oven and bake for 12 - 15 minutes, or until meatloaf has browned on the top.
Serve hot with marinara sauce.
Makes 16 Meatloaves, great for freezing.
