Ingredients

    Ground beef, lean, 8 oz (remove)
    Water, tap, 8 cup (8 fl oz) (remove)
    Salt, .5 tsp (remove)
    Pepper, black, .5 tsp (remove)
    Onions, raw, .5 cup, chopped (remove)
    Garlic, 3 cloves (remove)
    Carrots, raw, .75 cup, chopped (remove)
    Celery, raw, .25 cup, diced (remove)
    Green Peppers (bell peppers), 1 tbsp (remove)
    *Peppers, sweet, red, fresh, .5 cup, chopped (remove)
    Yellow Peppers (bell peppers), 5 strips (remove)
    Barley, pearled, uncooked, 1/2 cup (remove)
    *Tomatoes, red, ripe, raw, year round average, .25 cup, chopped or sliced (remove)
    *Ketchup, Heinz, 2 tbsp (remove)
    Cabbage, fresh, 2 cup, shredded (remove)

Directions

Break ground beef into pieces in soup pot. Add 1 c water, salt & pepper, bouillon, onions, garlic, and bring to boil. Chop carrots, celery, and peppers, adding them as you go. Add the rest of the water, and 1/2 c uncooked barley (or 1 c cooked...) When barley is tender, add tomatoes, ketchup and cabbage. Bring to a boil again, then turn down and allow to simmer until cabbage is cooked. (Can simmer as long as you like, it blends the flavors...)

    I really enjoyed the soup, but I can't give it a high rating because I changed a few things. I increased beef to one pound. Then I added 5 cups of beef broth, 2 cups of V8 juice and one cup water for the 8 cups of water in the recipe. Also added a couple of dashes of Worcestershire sauce. - 2/8/18

    Made this soup today almost exactly as present4ed. Very light tasting, which I love about it. For those, like my SO, who like very flavorful dishes it'll be easy enough to add favorite spices to amp up the taste. Added to my collection. - 12/17/14

    I have tried this recipe and something is not correct. Instructions say buillion, but none on the ingredient list. I added 32 oz of low sodium beef broth. I increased the beef to 1 lb, and doubled the amount of cabbage. I aslo subbed in a can of rotel tomatoes & chilis for the fresh. - 10/6/13
