Introduction
Adapted from BC cookbook. It needs more umph... maybe extra salt or a hot pepper? The sour cream seemed to change the flavor a bit too much. Adapted from BC cookbook. Ingredients

1 butternut squash (2pounds) - peeled and cubed
1 medium onion - chopped
1 can chicken broth
2 cups apple sauce
1/2 tsp ground ginger
1/4 tsp salt
1 cup sour cream
Directions
Mix all ingredients except sour cram into 3.5 - 6quart slow cooker.
Cover and cook on low for 8-10 hours. (or until squash is tender)
Use an immersion blender to smooth the soup. (if you don't have one, you can do it in the blender, but make sure to take the center vent out of the cover, and then put a towel over the top to stop spills!)
Stir in sour cream. Cover and cook an additional 15 min.
(perhaps skip the sour cream... more squash or less applesuace... maybe some cumin?)
