Ingredients

8 oz whole wheat pasta (we usually use rotini)
4 TB butter
2 eggs
6 oz evaporated milk
1 tsp kosher salt
1 tsp white pepper
3/4 tsp dry ground mustard
6 oz shredded colby jack, by weight (approx. 2 cups)
Directions
In a large pot, bring salted water to a boil and cook pasta until al dente, about 10 minutes. While pasta is cooking, whisk together in a small bowl the eggs, milk, salt, pepper, and mustard.
When the pasta is cooked to desired doneness, drain and return to the pot, then melt in butter over low heat. Toss to coat. Stir the egg mixture into the pasta, and add the cheese. Continue to stir over low heat for about 3 minutes, or until smooth and creamy.
Serving size is 1/2 cup - makes about 9 servings.
