Number of Servings: 4

Ingredients

    8 oz. Linguine or any pasta
    10 oz. bag Frozen Cooked Shrimp, Tail-Off
    1 Tbsp Butter
    1 Tbsp Olive Oil
    2 Cloves Garlic, minced
    2 Tbsp Lemon Juice
    1 oz. White Wine
    4 oz. can Sliced Black Olives
    1 bag Fresh Spinach
    2 Plum Tomatoes, diced
    Salt and Pepper to taste

Directions

Cook pasta according to package directions. Thaw shrimp as directed on package. Drain olives and set juice aside. Meanwhile, heat butter and olive oil over medium heat. Saute garlic for 1-2 minutes. Before garlic browns, add lemon juice, white wine, and juice from olives. Add salt and pepper to taste. Heat liquid to a boil and immediately add spinach. Cook, stirring frequently, until spinach begins to soften. Add tomatoes, olives, and shrimp. Cook until heated through, about 3 minutes. Serve immediately over pasta.

    I make something similar- I do NOT cook the spinach and use it as a base on the bottom of a large serving dish, putting the pasta and shrimp (chicken, mushrooms, many other things work great also), mixture on top. The fresk spinach is GREAT with the hot pasta & toppings! - 5/31/07

    Very Good
    It's tasty and easy to make. There was too much liquid once the dish was done so I added some corn starch to thicken it. I also added a bit of cayenne pepper to give it some bite. In the future I'll try holding back on the amount of olive juice I add to the pan. - 9/26/12
