Introduction

We use all organic ingredients and produce from our local farmers market.

You can make your own pita bread, or buy at the supermarket.

Ingredients

    Pita Bread, Whole Wheat; 2 pitas
    Olive Oil, 2 tsp
    Red Ripe Tomatoes, 2 large whole (3" dia) , cut in chunks
    Scallions, raw, 4 medium (4-1/8" long) , sliced thin
    Carrots, raw, 2 small (5-1/2" long) , shredded
    1/2 english Cucumber, cut into chunks
    Radishes, 4 small, sliced thin
    Parsley, 1 cup, chopped
    Fresh chopped mint leaves, 1 cup, chopped
    Garlic, 1 clove
    Salt, 1 tsp
    Lemon Juice, .25 cup (remove)
    Molasses, blackstrap, 2 tbsp (remove)
    Pomegranate Juice, 1 oz (remove)
    Yogurt, plain, low fat, .33 cup (8 fl oz) (remove)

Directions

Make the Dressing:

Place the garlic and salt in a mortar and crush to a paste with a pestle, or you may use a garlic press to do this. Then, in a mixing bowl, beat together with the lemon juice, molasses, pomagrante juice, and the yogurt and pour into a screw-top jar.

Make the Salad:

Mix the tomatoes, scallions, cucumbers, radishes, herbs and lettuce together in a large bowl.

Toast the Bread:

Slice the pita bread into strips, drizzle olive oil over the slices and toast until golden.

Arrange the salad on plates, and place the pita strips over the salad. Drizzle with the lemon dressing.

For additional bonus, serve with Falafel Patties and or Feta Cheese or Goat Cheese.
