Introduction
My kids don't even miss processed chicken nuggets now that i started making this homemade variety! For a less spicy version use 1/4 T of garlic powder and Mrs. Dash original instead of the Southwest Chipotle blend. Ingredients

Skinless, boneless, chicken breasts- 48 Ozs.
Total Cereal- 5 cups
Flaxseed- 1/2 C
Black Pepper- 1T
Garlic powder- 1 T
Mrs. Dash Southwest Chipotle blend- 1 T.
2 Eggs
Canola oil no stick cooking spray
Directions
This recipe makes 11- 5 piece servings. I have a large family so adjust the recipe as needed.
Cut the chicken breast into 1-2 inch squares.
Put 5 cups of Total cereal into a bowl. Use the bottom of a clean measuring cup to scrunch the cereal into tiny pieces. Add Flaxseed, black pepper, garlic powder, and Mrs. Dash. Stir until blended.
In a small bowl crack to eggs. Blend eggs with a fork.
Coat 2 large baking pans with canola oil.
Take pieces of chicken, dip into eggs and then roll into cereal coating. Place on baking sheet.
Bake for 25 mins at 400 degrees or until the center of the meat registers 165 degrees with a meat thermometer. Turn pieces halfway through cooking time. The chicken should be brown.
***For a non- spicy variety reduce garlic powder to 1/4 T and substitute Mrs. Dash original blend with the southwest blend.
