Ingredients

    - 1 can drained & rinsed chickpeas (1.75 cups)
    - 2 c diced tomatoes (with liquid)
    - 1/2 c diced onion
    - 1 c baby spinach
    - 1 c cauliflower
    - 1/2 tbsp olive oil
    - 1 clove garlic
    - 1/4 tsp ground ginger
    - 3/4 tsp cumin
    - 1/4 tsp salt
    - 1/2 tsp sugar
    - 1 tsp turmeric
    - 1/2 tsp chili powder
    - 3/4 tsp cayenne

Directions

Heat oil in skillet. Sautee onions for a few minutes until tender. Add ginger, garlic, cumin, cayenne, tuemeric, chili powder, and slat (all the spices except sugar). Sautee 2 minutes. Add tomatoes and sugar. Simmer 5 minutes. Add chickpeas and spinach. Simmer 5-10 minutes.

Serve over rice. Makes 4 servings.
