Ingredients

2 tablespoons extra virgin olive oil
2 pounds ground chicken breast
3 large carrots, peeled and finely chopped
1 large onion, chopped
4 ribs celery with leafy tops, finely chopped
4 cloves garlic, chopped
1 tablespoon smoked sweet paprika
2 cups chicken broth, 99% fat free
28 oz. can crushed tomatoes
1 14-15 oz. can of black beans, drained and rinsed
1/2 cup hot sauce, such as Frank's Red Hot
Directions
Place a large sauce pot over medium-high heat with the olive oil. Add the ground chicken and break it up, lightly browning it until it's cooked through.
Add the carrots, onion, celery, garlic, and paprika. Cook, stirring frequently, for about 7-8 minutes or until the onions start to look clear. Add the chicken broth and scrape up any brown bits on the bottom of the pot.
Add the hot sauce, crushed tomatoes, and black beans to the chili and bring up to a bubble. Simmer for 30 minutes to let the flavors come together.
Makes 10 cups. 1 cup per serving.
