Introduction

Quick and Easy to whip up. They freeze great and are awesome for on-the-go breakfasts. Quick and Easy to whip up. They freeze great and are awesome for on-the-go breakfasts.
Number of Servings: 12

Ingredients

    dry ingredients:
    3 cups bran flakes cereal (crushed finely)
    2 cups whole wheat pastry flour
    1.25 tsp baking soda
    1/2 tsp salt

    Wet ingredients:
    1/2 cup maple syrup
    5 tsp packed brown sugar
    1 egg
    2 cups 1% milk with 2tbsp vinegar (or can use low-fat buttermilk)

Directions

preheat oven to 350 degrees
1. combine 1% milk and vinegar and set aside
2. combine all dry ingredients (crush bran flakes first)
3. combine all wet ingredients including the milk mixture
4. combine wet ingredients into dry
5. use non-stick cooking spray to grease 12 inch muffin pan
6. fill muffin pan and bake for 20 minutes or until inserted toothpick comes out clean

Makes 12 servings, 1 muffin = 1 serving
