Introduction

Number of Servings: 6

Ingredients

    2 medium sweet potatoes, grated
    1/2 large onion, chopped
    5 oz of fresh spinach, chopped
    1 tbsp of olive oil
    Salt and pepper to taste preference

Directions

1. Grate the sweet potatoes
2. Chop the onions
3. Chop the spinach
4. Pour the tbsp olive oil in a skillet over med. high heat.
5. Add the onions to the skillet and saute until lightly brown.
6. Add the sweet potatoes to the skillet and cook for 7-9 minutesoccasionly turning
7. Add the spinach and cook until slightly wilted (2-3 minutes. Turn as needed.
8. Add salt and pepper per your taste (I didn't add any salt or pepper and thought it tasted great)

Serve. Makes about 4-6 servings.

    Sweet potatoes...one of my favorites. This sounds yummy but I think I'll try making it with cooked mashed or chopped up sweet potatoes...grating them is too much work for me. - 1/24/11
