    2 onions
    1/4 c olive oil
    2 T butter
    4 cloves garlic
    1 T crushed ginger
    1 tsp turmeric
    1 tsp cumin
    1/2 tsp red pepper flakes
    1 tsp ground coriander
    1 tsp cinnamon
    5 oz red lentils
    2 diced tomatoes
    1 can chick peas
    5 oz cashews
    2 large handfuls spinach leaves
    salt & pepper to taste

Directions

makes 8 servings, but is easily halved or quartered for a smaller family.
