Ingredients

6 med. Vidalia onions thinly sliced.
3 garlic cloves.
2 Tbs.olive oil.
6 C.low fat, low sodium chicken broth
1 tsp oregano
1 tsp tarragon
1 tsp herbs de provance
1 tsp hungarian hot paprika
1/4 tsp crushed red pepper flakes
1/4 tsp peppercorns crushed.
Directions
makes 6 servings.
Add the oil 1 tbsp at a time to frying pan ,saute onion and spices in batches (med./Hi heat) until browned.add oil as needed.
heat up the chicken broth, add the onions and crushed garlic, whisk out fryingpan with 1 cup of the broth ,pour into soup.
cook soup until done ,apx 30 min. longer cook-time makes more flavorful soup add spices as needed.
serve.
Now the french part:put the soup in individual oven proof soup bowls,
add 1 slice of french bread to each bowl, grate cheese over bread,to cover ,and bake in oven until cheese is melted.
