Introduction

This is a remake of an old favorite, peach crisp. It doesn't crisp up like the topping with brown sugar and butter, so I did not call it a crisp. I served it with a dollop of Cool Whip Free. Ingredients

    2 cups frozen peaches, thawed (or fresh in season), sliced
    2 Tbsp. tapioca
    1/2 cup Splenda
    2 Tbsp. Smart Balance Light Spread, melted
    1/3 cup Bob's Red Mill 5 Wholegrain Hot Cereal (pkg, not cooked)
    4 tsp. flour
    1 Tbsp. honey

Directions

Preheat oven to 325*F. Grease 8" square pan. Mix tapioca and Splenda into peaches and set aside to soak up. Melt Smart Balance Spread. Stir in cereal, flour and honey. Sprinkle topping over peaches. Bake about 35 minutes until edges are bubbling and topping is turning golden. Serve warm or cold, with Cool Whip Free, if you like. The Cool Whip is NOT included in the recipe calculations. Serves 6.
