Ingredients

    3 chicken breasts, halved
    1 large onion, sliced
    1/2 apple cider vinegar
    1/2 low sodium soy sauce
    2 Tbs agave nectar
    5 cloves garlic, crushed or sliced
    Large head of bok choy, cut into strips or bite sized pieces

    Put everything but the bok choy into slow cooker. Cook on low for 7-8 hours, or high for 4-5 hours. If cooking on low, increase to high about 10 minutes before done. Fold in bok choy about 5 minutes before finished and cook till tender.

    Serve over brown rice or quinoa (not in nutritional calculations)
