Introduction

Number of Servings: 4

Ingredients

    400 grams skineless, deboned chicken breasts.

    Half a cucumber, diced
    1 large carrot, cut into matchsticks
    1 can pineapple pieces (400 grams)
    1 Small red bell pepper, sliced into thin strips

    45ml/ 3 tbs Soy Sauce
    30ml/ 2 tbs tomato paste
    60ml/ 4 tbs malt vinegar
    1 tsp ground ginger
    1 tsp mustard powder

Directions

• Cut the chicken into smallish strips & fry in a large
saucepan until cooked through
• Remove the chicken from the pan
• Place remaining ingredients in saucepan and bring to the
boil
• Reduce heat and simmer for a few minutes
• Add the cooked chicken to the mix & simmer a bit.

Makes 4 generous servings, serve with rice.

* Just add water to the final mix if you would like more
sauce.
* To lessen the calories you can use only half the syrup
from the pineapples & use more water.
* This dish is even better if served after standing overnight.
