Introduction

A quick and hearty soup to whip up after a day of shoveling snow! A quick and hearty soup to whip up after a day of shoveling snow!
Number of Servings: 6

Ingredients

    4 cups of vegetable broth
    5 small potatoes (about 1 lb.), diced 1/3"
    1/2 bunch broccoli (including stalk), chopped
    1 can sweet corn
    12 0z. ham steak, diced
    1 can Cream of Potato soup, undiluted
    onion powder to taste (about 1/2 Tbsp.)
    white pepper, to taste

Directions

Makes 6 hearty 1 1/2 cup servings

Heat vegetable broth. Add diced potatoes and simmer. While potatoes cook, chop broccoli keeping diced stalk separate. When potatoes are al dente, add diced broccoli stalk, canned corn and diced ham steak. Stir in chopped broccoli flowerettes and undiluted can of cream of potato soup, season with onion powder and white pepper to taste. Turn off heat and serve.
