Introduction

I found this recipe on the spark people forums, it's delicious and easy. Regretfully I do not know where the credit for this recipe belongs, but it does not belong to me. I did however tweak the recipe by adding different ingredients.
I also used a small casserole dish to bake it in.

Ingredients

    3 cups sliced zucchini
    1.5 cups chopped green pepper
    1 medium onion, chopped
    6 medium mushrooms, sliced
    2 tbsp. olive oil
    2 large tomatoes, sliced
    450 grams ground turkey
    140 grams compliments balance marble cheddar, grated
    2 cups compliments balance mushroom and garlic pasta sauce

Directions

Spray a cookie sheet with nonstick spray, lay out slices of zucchini, sprinkle with salt and roast at 400 degrees until tender and lightly browned about 10 to 15 minutes. Set aside. Saute turkey, onion, mushrooms and bell pepper in olive oil until turkey is browned. Season with salt and pepper. Add pasta sauce.
Put a layer of meat sauce on bottom of dish, then a layer of zucchini. layer 4 discs of sliced tomato on top, then sprinkle a layer of shredded cheese over zucchini. add another layer of the meat sauce, followed by the rest of the zucchini, tomato and cheese.
Bake at 375 degrees for 45 minutes until top is browned and bubbly.
