Introduction
This is an awesome easy vegetarian alternative to a typical ground-meat lasagna. It's made with whole wheat pasta instead of traditional lasagna so it's really easy and quick to make. Ingredients

1 12 oz bag Boca Crumbles
1/2 small onion, diced
1 Tbsp olive oil
4 tsp minced garlic
1 tbsp oregano
1 small can diced or stewed tomatoes, no salt added
1 cup tomato sauce
8 oz shredded mozzarella cheese, part skim milk
1 13.25 oz box whole wheat pasta
Directions
1. Put on a large pot of water for the pasta. Bring to a boil. Cook pasta according to directions (12-15 minutes)
2. While water is boiling, add garlic, onion, and Boca crumbles to a large sauce pan. Cook for about 5 minutes over medium heat or until crumbles and onion are cooked through.
3. Add oregano, tomatoes, and tomato sauce to the sauce pan. Continue to cook over medium-low heat, stirring often, while pasta cooks.
4. Drain pasta. Combine pasta, sauce mixture, and shredded cheese together. Stir well.
Add salt and pepper to taste (not in nutrition count)
Makes approximately 8 good size servings (About 1.5 cups).
