1/4 cup minced red onion
1 Tbs. sugar
1 Tbs finely chopped seeded jalapeno
2 tsp cider vinegar
2 tsp low sodium soy sauce
1/2 tsp salt
1/2 tsp allspice
1/2 tsp thyme
1/2 tsp black pepper
1/4 tsp ground red pepper
8 skinless boneless chicken thigh (about 1.5 pounds)
Directions
Combine first 10 ingredients in a large bowl, add chicken, toss to coat. Heat a grill pan over medium-high heat. Coat pan with cooking spray. Add chicken to pan, cook 4 minutes. Turn chicken over, cook 6 minutes or until done.
