Introduction

Ingredients

    3 Slices of turkey bacon
    2T EVOO
    Medium Red Onion
    3 Stalks Celery
    1 Lg. Carrot
    2 C. Shredded Lettuce
    0.25 C fresh basil leaves
    0.25 C fresh parsley leaves
    1 tsp. dried rosemary
    2 cloves minced garlic
    1 Quart drained, crushed tomatoes (italian style)
    1 Can white beans
    1 Can kidney beans
    2 Qts. Chicken broth
    4 C. cubed chicken (4 chicken breasts)

Directions

Cook EVOO & bacon in the bottom of the pot
add all the veggies, stirring in until the greens begin to melt. cover and cook until the veggies are tender. (i like my veggies a little crunchy so i don't let them get too soft).
add remaining ingredients and simmer for about an hour. you can do longer if you want and it doesn't really alter the flavor.


makes 20 cups

it freezes very well and defrosts easily!
