Ingredients

    1 C carrot slices
    .5 large onion - diced
    1 medium parsnip - sliced
    2 C small red potatoes cut into small wedges
    1 tsp canola oil
    .5 C chicken broth (or vegetable broth)

Directions

Pour chicken broth into baking pan
Add veggies
Drizzle oil over veggies
Cook for 40 minutes or until done
