Looking for something healthy and easy to make...then look no more. These are great to take to work for a tasty breakfast or snack. They freeze well and can be taken out just before you leave for work. just pop one in the microwave for a few seconds and enjoy a warm muffin. Worth a try. Ingredients

    1 1/8 cup whole wheat flour
    1 1/8 cup oatmeal (dry instant or old fashioned)
    1 tsp. baking soda
    1 tsp baking powder
    1/2 tsp. cinnamon
    1/4 tsp. salt
    1/2 cup lowfat butter milk
    1 cup unsweet apple sauce (any brand)
    1/2 cup brown sugar
    1 large egg beaten
    2 tbs. canola oil
    3/4 cup blueberries (fresh or frozen)
    1/2 cup raspberries (fresh or frozen)

Directions

Combine flour, oats, baking powder, baking soda, salt and cinnamon.
In seperate bowl combine apple sauce, butter milk, sugar, oil and egg. Make well in dry ingredients and add apple sauce mixture. Stir until moist. Fold in blueberries.
Makes approx. 12 muffins. Use regular size muffin tins and spray with oil or use paper liners. Bake at 400 degree for approx. 15 to 18 mins.
