Ingredients

    Chili powder, cumin, onions, mushrooms, ground chicken, diced tomatoes, green chili peppers, spinach, black beans

Directions

Cook 8oz dried black beans 1-2 hrs at a boil.

saute spices in olive oil in dutch oven/lrg sauce pan. Add onions, mushrooms, bell pepper & ground chicken and 2TBSP water. cook on medium until vegies are soft & chicken is cooked through. Meanwhile, blend .5c tomatoes with spinach. Add diced tomatoes, spinach mix and chili peppers to pan.
Put black beans in crock pot. add chicken mixture. Set at high 2-3 hours, or leave overnight on low.
