Number of Servings: 6

Ingredients

    4 slices of bacon (cut into 1/2 inch pieces)
    1 small onion
    1 lb white mushrooms (trimmed and quartered)
    1 lb cremini mushrooms (trimmed and quartered)
    1/4 cup tomato paste
    1 1/2 cup water
    2 tsp dried thyme
    1/4 fresh italian parsley
    2 tsp red wine vinegar
    3/4 lb spaghetti

Directions

MAKES 6 SERVINGS

cook bacon pieces in large saucepan on med heat until crispy (use 5 quart pot/pan- make sure it has a lid for later) ; remove and set aside

add the onion to the saucepan; stir until golden (1 min)

add mushrooms; cover and cook about 20 minutes

add tomato paste, thyme, and water until combined; cover and cook until sauce thickens (8-10 minutes)

meanwhile, cook pasta to al dente. Drain.

add parsley, vinegar and bacon to the mushroom sauce.

toss pasta and sauce together and serve right away!
