Quick and hearty chicken enchiladas. Quick and very good. Quick and hearty chicken enchiladas. Quick and very good.
Number of Servings: 8


    2 1/2 cups chopped/shredded cooked chicken (about 2 breasts)
    1 10.5 oz can cream of chicken soup
    1 cup sour cream, divided
    1 1/2 cup shredded cheddar (or jack) cheese
    1/4 cup chopped cilantro
    12 6" flour tortillas
    1 1/2 cup salsa


Makes 8 servings

PREHEAT oven to 350, boil chicken in water, cool under tap water and shred. Combine chicken, cream of chicken soup, half a cup of sour cream, cheese and cilantro in a bowl.

SPOON 1/4 cup of mixture down the center of each tortilla; roll up. place, seam side down, in a baking dish. Top with salsa and remaining cheese (about a 1/2 to 1/4 cup). Cover with foil.

BAKE 15 minutes; remove foil. Continue baking 10 minutes or until cheese is melted. Top with cilantro and sour cream.
