Ingredients

    4 slices Hormel precooked bacon
    1 cup frozen seasoning blend (onions, bell peppers, celery)
    1 cup liquid egg substitute
    2 eggs
    1/4 cup reduced fat cheddar cheese shredded
    Salt and pepper to taste

Directions

Spray oven proof skillet with Pam. Place 4 slices precooked bacon in skillet and heat until it is crispy. Remove bacon and crumble.Set aside. Add vegetables to the skillet , cooking them until translucent and brown. Beat eggs and substitute together. Add bacon and pour over vegetables. Cook over low heat until eggs start to brown. Put skillet into oven with broiler on and continue to cook until the eggs are done. Sprinkle cheese on top and return to oven just long enough to melt cheese. Makes 2 servings for a really filling breakfast.
