Introduction

Cooked garbanzo beans with feta cheese, onion, and cilantro in a paprika/cumin/lemon dressing. You don't have to use dry garbanzo beans - using canned beans cuts way down on prep time. Ingredients

    1.5 cups dried garbanzo beans (or 3 cups canned)
    1 tbsp olive oil
    1 tsp ground cumin
    1 1/2 tsp paprika (smoked paprika is the best for this recipe)
    Juice of 1 lemon
    4 oz feta cheese
    1 small to medium red onion, or to taste
    Cilantro to taste
    Salt and pepper to taste

Directions

If using dry garbanzo beans, cook the beans, then drain them. If using canned garbanzo beans, drain, then rinse them in warm water.

Combine the olive oil, lemon juice, paprika, and cumin in a small bowl, then pour the dressing over the beans and toss.

Slice the onion thinly.

Wash the cilantro and chop the leaves coarsely.

Add the onion and cilantro to the beans. Toss.

Add the feta to the mixture. Toss slightly.

Add salt and pepper if you like. Serve warm. Makes 6 1/2 cup servings.
